Herb Flower with Blackthorn Salt

This herb flowers salt is made with flowers from Huntly Herbs organic herb garden and Blackthorn’s Scottish Sea Salt.

Herb flowers tend to have a similar flavour to the leaves of the herb, but often slightly sweeter and milder than the leaves – which makes them perfect to combine with the subtle flavours of Blackthorn’s renowned sea salt.

The colours in this herb flower salt create a beautiful “finishing salt” to sprinkle on a dish before serving, although of course the salt can also be used in a grinder or added to a recipe while cooking.

It’s made with Huntly Herbs own organic chive, thyme, sage, calendula, wild garlic, oregano and winter savoury flowers – grown on land which has been organically certified for 25 years, harvested and dried carefully to preserve as much flavour as possible.

The fresh flowers are mixed through the salt during the drying process, which means the full flavour of the herb is absorbed by the salt itself – rather than simply blending dried herbs with salt.
